Since its opening in 2011, the Shang Palace at the Shangri-La Hotel, Paris has been a favorite for amateurs of Cantonese cuisine in the city of lights – Parisians and travelers alike. Offering the perfect exotic and refined pause, you feel transported in the heart of the Orient as soon as you step in, miles away from the palace’s utterly French tea-time salons.

For the second year in a row, the Shang Palace opens its kitchen to 2 Michelin star Chef Mok Kit Keung, in order to celebrate Hong-Kong gastronomy between March 19 and 30, 2015.
Coming directly from iconic hotel Kowloon Shangri-La, Hong Kong, Chef Mok  has prepared meals for King Mohammed VI of Morocco, the president of Russia and many other prominent dignitaries and celebrities from around the globe.

On the menu for this unique gastronomic week, Chef Mok’s brings us some of his exquisite and unexpected specialties: Crispy lobster with oatmeal, Hand-shredded baked chicken with rock salt crust and jelly fish, Sautéed fresh milk and egg white with Alaska crab meat and black truffle, Sautéed sliced beef, morel mushroom and white asparagus with Sichuan pepper corn…

Sautéed fresh milk and egg white with Alaska crab meat and black truffle… Another clever, light association

The a la carte menu also offers other delicious creations, surprisingly creative in my opinion as Chef Mok succeeds to give a modern and contemporary twist to noble products such as turbot fish, Alaska crab and lobster. This lobster definitely was the best I have had in a long time, with a crispy note brought by the oatmeal Chef Mok brought especially from Singapore.

This sautéed sliced beef tastes so soft !! it comes with morel mushroom and white asparagus with Sichuan pepper corn

Just the amount you need of pan-fried turbot fillet in soy sauce served with crispy rice

The dessert: chilled sweetened pumpkin cream with coconut ice cream and baked custard pastry
