Yoshi at Hotel Metropole Monte-Carlo: the only Japanese restaurant by Joël Robuchon

The world’s most awarded Michelin-starred chef; Joël Robuchon has been serving as the visionary behind the main restaurant concepts at Hotel Metropole Monte-Carlo since 2004. With the desire to share his contemporary vision of Japanese cuisine in France, the chef decided to open Yoshi, his world’s unique Japanese restaurant, at the hotel in 2008.

For the chef who has been awarded “Chef of the Century” by Gault Millau and noted for developing the “Best Restaurant in the World” by the International Herald Tribune, proposing the exceptional in all simplicity was undoubtedly the most challenging task. Recognized for its culinary excellence worldwide, the restaurant has been awarded a Michelin star since 2010.

On the table:

The chef, Takéo Yamazaki, proposes a choice of Maki, Sushi and Sashimi as well as ‘à La Carte’ dishes such as the ‘Ise Ebi No’ soup (spiny lobster with a Kombu ‘consommé’) and the Zeitaku Wakame (seafood jelly) served with a selection of Sakes, japanese green teas and international wines.

Collaborating with Japanese chef, Takeo Yamazaki, Joël Robuchon’s vision for Yoshi was to create a restaurant with healthy, modern cuisine with signature Japanese offerings that is also carefully adapted to Western palate.

On my visit at Yoshi, I was delighted to try a different selection of the Chef’s hot offers: we started with Hiyashi Wakame, spicy with sesame as an amuse-bouche; followed by sushi & sashimi of the chef’s selection. Needless to say, we were conquered already by the perfect balance of tastes, and the utmost quality of ingredients.

The amuse-bouche and starter were soon followed by a DE-LI-CIOUS Ghindara no saiko yaki (grilled marinated black cod), which was just perfect. Japanese food, with a Michelin touch indeed ! We also tried the Tori no teriyaki (lacquered chicken). A classic revisited to perfection.

Of course, the following Miso soup also was to dir for, as well as the desserts !

The place:

Dreamed by the interior designer Didier Gomez, careful to respect Japanese influences and the Hotel Métropole Monte-Carlo’s elegance, Yoshi represents a warm and pure style restaurant. Green, ivory and yellow tinted, set with noble materials such as stone, silk and ebony wood, it draws a peaceful atmosphere in a perfect osmosis with ‘La Carte’.

“In Monaco, we are fortunate to have a discerning clientele who seek natural simplicity and Yoshi’s success fulfills this quest” says Joël Robuchon. Featuring an open kitchen and sushi bar, the restaurant was designed by French interior architect, Didier Gomez. Yoshi embodies chic and understated décor, blending ebony, stone and silk with soft lighting in hues of green, white and ivory. Large enough to seat up to 40 guests, Yoshi opens out to a Japanese-inspired garden, which consists of protective greenery designed by landscaper, Jacques Messin. The light, serene atmosphere is complemented by menu items such as Miso-Katsu, Ebi Shinjo and Foa Gura To Unagi.
